Homemade Poptarts

These have been popping up (get it?) on Tastespotting and on Foodgawker every now and then and I thought it was time I tried them out. I haven't had poptarts in years (have you seen the label?) but I still remember thinking they were good. I didn't look at any specific recipe. I thought the idea was simple enough so I made my own.
I made my regular homemade chocolate pudding only using a little more cornstarch than normal. I wanted it to mound on itself a little and not ooze out all over my oven. I also used my now favorite pie crust recipe from Arwen's mom. Incidentally, I wouldn't put these in the toaster.
The icing was just a very simple powdered sugar icing. I colored some granulated sugar and "sprinkled" over the top. My house has become so humid that my sugar is sort of wet now. *sigh*
I've actually tried these already but with a homemade blueberry orange jam for the filling instead of the chocolate. They were pretty good. I'm thinking you could probably put anything in these. Smores perhaps or some brown sugar and cinnamon. Certainly any jam will do. Anyway onto the recipe.
Ingredients
- pie crusts for two pies
- pudding or any other filling
- powdered sugar (maybe 1 C )
- 1 T butter
- small amount of milk (maybe 2 T)
- colored sugar or topping of choice
- flour for dusting
Method
Preheat the oven to 425 F. Roll out one pie crust at a time to make a thin rectangle. About 1/8 to 1/4 of an inch depending on how much filling you're planning to use. Even out the edges and cut into 4 smaller rectangles. Place the filling on one side of the dough. Probably toward the center is best so there are no messes. Fold the dough over and press to seal. Crimp the edges with the tines of a fork and poke a few holes in the top of the poptart. Place on an ungreased baking sheet and continue with the rest.
Bake these in the oven for maybe 6 minutes or so is what I did. Check on them to make sure they are not over browning. Remove to a wire rack to cool.
Meanwhile, make the icing by combining the powdered sugar, butter, and milk. You can add more sugar if the icing is runny or more milk if it is too thick. Sprinkle with sugar and enjoy.
