Daring Cooks November Challenge: Sushi

The November 2009 Daring Cooks challenge was brought to you by Audax of Audax Artifex and Rose of The Bite Me Kitchen. They chose sushi as the challenge.
This was quite a fun challenge for me. I looked forward mostly to finding a way to make sushi vegetarian and have my husband still like it. Thankfully, he did like it!
The challenge this month was how to make sushi rice or su meshi properly. Although I did follow their technique, I used different proportions of the sugar and vinegar based on my Japanese cookbook. I'll be upfront about it, I hate sushi. The rice normally tastes terrible to me. When I tried the recipe in my cookbook, I was surprised to find that I liked it. It uses less vinegar and more sugar.
I made four types of sushi with my rice. First I made Nigiri-Zushi substituting the pan fried tofu for the prawns. I then made Temaki-Zushi this time using oyster mushrooms and fried eggplant with chives for the filling. My third and fourth sushi was Hoso-Maki and Futo-Maki. I used cucumber and lightly cooked carrots in those.
